My favorite version uses Blue Ridge Olive Oil Company’s Cranberry Pear White Balsamic. It’s one of those ingredients that quietly takes this dish to another level without overpowering the beets.
Cook’s Note: Beets can vary quite a bit in natural sweetness. Start with a small drizzle of honey, taste after adding the white balsamic, and adjust until the sweet and tangy flavors are balanced.
These beets are especially good slightly warm, when the dressing can soak into them and optional goat cheese softens just a little.
